Menu Monday & Kale Chips!

I have Failed with a capital F at Menu Monday this summer. There was once a time where I was consistent with posting recipes and new foods. That is no longer the case. Summer has just broken my routine. I swear things will go back to normal once school starts.

This week we're only going to be here for part of the week so Menu Monday is happening, but I've only got 3 dishes for ya. What a letdown, I know. However, I've also got a fun new snack recipe for you to try. Trust me...it's good!

My Meals for the week:
  • Creamy Tomato Basil Pasta with Shrimp...this is from the Kraft foods website. It's a great place to find recipes if you're counting calories, as it's got all the nutritional info ready and done for you. I find that I put weight on in the summer...I have no idea why. Sitting around the house and watching Netflix all summer long counts as a work out, right??? Because of my ever expanding hips, I'm back to counting calories.
  • And meal 2 is PW's Spaghetti with Artichokes and Tomato Hearts. I made this a few months ago and remembered loving it. My blog buddy Megan tweeted about it this week and I have been craving it ever since.

And now for the snack I promised! This weekend two of my good college pals, Laura and Rachel came to visit. Here we are at breakfast on Sunday morning.


While we were sitting on the beach on Saturday afternoon, Laura was telling us that she had recently made Kale Chips. KALE CHIPS? As one who doesn't love many greens, I was skeptical. Very skeptical. But Laura swore these healthy things actually tasted like potato chips.

I just couldn't believe it.

But we stopped by the grocery store anyway and picked up some Kale. And sure enough, after making her first batch, I had to admit, these crispy little treats did resemble a light potato chip. WHO KNEW!



I had seen them before on Kath Eats Real Food, and each time she wrote about them, I honestly thought, "GROSS!", but I'm here to take that back now. I am a fan! Here's Kath's recipe...very similar to the one Laura made. Try 'em out, you'll be surprised!

  4. Totally made the Kale chips after seeing them on Kath's blog too....so delicious. And I'm right there with you on the gaining weight in summer thing. Think its because we teachers usually stay on our feet pacing around the classroom all day.
