- Skirt Steak Salad with Blue Cheese via Smitten Kitchen. I plan to use flank steak instead of skirt. Skirt steak always seems so fatty.
- Tomato and Sausage Risotto also from Smitten Kitchen, recommended by Kate...I also plan to use Chicken Italian Sausage like she did...love finding ways to cut back calories in recipes without cutting out taste!
- Stuffed Peppers
- Gnocchi (from Trader Joe's!) and homemade pesto from our freezer...here's the recipe for the pesto. PLUS our new favorite salad! (we made this meal last night, see photos below)
And the Gnochhi, doesn't look so beautiful in the picture, but trust me, it was delicious!
